Spinach and Quinoa Soup

Sauteed:

1 Tblsp olive oil

couple pinches of salt

black pepper to taste

1 onion

4 coves garlic

Add and bring to a boil:

4 cups water

1/4 cup red wine

1/4 cup rice vinegar

1 cup quinoa

Simmer for 30 minutes,

Add:

2 cups fresh spinach and let stand for 10 minutes.


This was my 2nd meal with quinoa- really yummy stuff!
